The Complete Guide to Japanese Drinks!

You have probably noticed that Kampai.US has been very quiet over the past 18 months. We have a couple of excuses for that. First of all, our founding editor, Stephen Lyman, has been very busy writing his first book, The Complete Guide to Japanese Drinks.

Second, the site is being redesigned from the foundations up to be mobile friendly. This has taken much longer than expected, but we hope to have new content up very soon (beyond this post). However, this post isn’t about that. Let’s talk about the book!

The Complete Guide to Japanese Drinks has now been published by Tuttle Publishing. It was released in the US on October 1, 2019.

The first half of the book covers Japanese alcohol traditions: sake, shochu, awamori, and fruit liqueurs (such as umeshu, or plum wine). The second half covers Japanese interpretations of western alcohol traditions that are popular in Japan: beer, wine, whisky, and cocktails. Complete with recipes, where to shop, and where to drink these amazing Japanese alcohols, this truly is a complete guide (if we don’t say so ourselves). As you can imagine, the writing on shochu and awamori in particular is among the most comprehensive English language writing on these obscure drinks.

It’s available on Amazon, but if you prefer to support your local bookseller, consider searching the title on IndieBound.org.  At only $19.99 MSRP for a hardcover with lots of photography and great information, it’s objectively a great value (although we’re biased).

Tasting Notes: The SG Shochu IMO

The SG Shochu IMO is a clear invitation to create the classic imo cocktail. If you get it right, it will resonate and cascade around the world until you can't not have sweet potato shochu on your menu if you consider yourself a proper drinking establishment.

Tasting Notes: Nankai

Nankai Shochu
At first whiff, Nankai smells faintly grassy, which is common in kokuto shochu owing to how kokuto sugar is made from fresh cut cane and that fresh grassiness is a sign of well made kokuto sugar. Sugar cane is, after all, a tall perennial grass. It is still pretty wild that they can capture that after fermentation and distillation.

Tasting Notes: The SG Shochu KOME

Putting your nose in a glass of The SG Shochu Kome shows you just how complex a vacuum distilled rice shochu can be. Ginjo sake aromas from the yeast, pineapple, melon, and a faint hint of dairy-like lactic acidity are all present.

Lento is the top selling kokuto shochu in Japan, and it is available internationally as well. Try it on the rocks or with sparkling water for a refreshing taste of the Amami Islands. Kanpai!

The SG Shochu MUGI Label
The SG Shochu MUGI wraps several barley shochu identities into one. It's lightly barrel-aged and carries the associated sweet notes. But there's also a graininess that is revealed when the temperature of the drink drops. It's a versatile barley shochu that can be enjoyed a variety of ways.

Mizu Lemongrass Shochu

Mizu Lemongrass Shochu may not be an authentic honkaku shochu due to the use of lemongrass, but this is a case where a beautiful spirit breaks the rules.
